One of the UK's leading Five Red Star country house hotels, Pale Hall is a luxurious destination for quiet retreat, comfort and culinary indulgence. Situated at the Snowdonia National Park this historic Victorian mansion features eighteen bedrooms and suites and four charming garden suites within the estate grounds.  With plans for significant investment and growth over the coming months, particularly in our dining choices, this is a very exciting place to be!

Pale Hall is searching for talented and charismatic Chefs de Rang to support the Restaurant Manager in giving an exceptional food and beverage service to our guests. Passionate about hospitality and experienced in fine dining, the successful candidates will have the character and personality to engage with our guests and deliver an impeccable service with courtesy, style and professionalism.  

A minimum of two years' experience in high calibre establishments is essential, with an emphasis on fine dining and a knowledge of wines and spirits. Our team displays the highest standards of personal presentation, and a positive and flexible attitude when business levels vary day by day. We’re looking for someone who will make a positive contribution to the success of our dining experiences, who is proactive and highly driven with a great attention to detail. This is a full time permanent position, five days over seven.

One of the AA Five Red Star hotels in Wales, with AA Three Rosettes and the coveted Michelin Green Star for food sustainability, Pale Hall currently offers two contrasting dining experiences.  The Henry Robertson fine dining room with tranquil views over the lawns serves our four and seven course tasting menus, and the rustic Huntsman bistro offers more relaxed dining from a traditional la carte menu.  Our food is created from locally sourced and sustainable produce with menus changing and developing as we move through the seasons.  With plans for expansion and new outlets, there are opportunities for the right people to grow and develop with us.

In return we offer a competitive salary of £28,000 per annum, a share of monthly gratuities, generous staff discounts, free meals on duty, on-site parking and the chance to work in a really stunning location.  We can assist with accommodation if required.

To deliver excellence in food and beverage service, following Palé Hall standards of performance at all times.

To demonstrate a high standard of personal presentation, appropriately dressed in company uniform and adhering to the dress policy.

To have a thorough up to date knowledge of the menus on offer throughout the year, including the components, presentation and delivery of each individual dish.

To provide a swift and professional service to hotel guests in the restaurants and lounges.

To be knowledgeable and competent in preparing and dispensing wine, cocktails and alcoholic/non-alcoholic beverages to the required standard.

To proactively communicate customer feedback and new ideas/suggestions for continuous improvement of customer service.

To maintain a positive and flexible attitude to the working environment.

 


A minimum of 2 years waiting on experience in a fine dining establishment.  At least one year at chef de rang level.
