Cashel Palace Hotel is seeking an ambitious, talented, and passionate Sous Chef – Banqueting to join our culinary leadership team.
This is an exciting opportunity for a skilled chef who enjoys the pace, precision, and creativity of luxury event catering and is ready to take the next step in their career within one of Ireland's finest hospitality destinations.
Working closely with the Head Chef – Banqueting and Executive Sous Chef, you will play a key role in delivering exceptional food experiences for weddings, private dining events, conferences, celebrations, and corporate functions while helping to lead and develop a high-performing kitchen team.
The Role
As Sous Chef – Banqueting, you will support the planning, preparation, and delivery of all banqueting and event food operations across the hotel. You will help ensure that every event reflects the impeccable standards, attention to detail, and culinary excellence for which Cashel Palace Hotel is renowned.
You will be a hands-on leader, maintaining the highest food quality standards while motivating and supporting the kitchen brigade to deliver memorable guest experiences.
Key Responsibilities
- Assist in overseeing the day-to-day operation of the banqueting kitchen.
- Support the delivery of weddings, conferences, private dining events, and special occasions.
- Prepare and present dishes to the highest five-star standards.
- Work closely with the Head Chef – Banqueting on menu planning, preparation schedules, and service execution.
- Supervise and support Chef de Parties, Demi Chef de Parties, and Commis Chefs.
- Ensure consistent food quality, presentation, and portion control.
- Maintain high standards of food safety, hygiene, and HACCP compliance.
- Assist with stock control, ordering, and kitchen inventory management.
- Help manage labour resources efficiently during busy event periods.
- Support training, coaching, and development of junior kitchen team members.
- Contribute ideas for menu innovation and continuous improvement.
- Ensure a safe, organised, and professional working environment at all times.

Essential Qualifications & Experience
- Professional Cookery Qualification (Level 6 or equivalent).
- Minimum 3 years' experience in a senior kitchen role within a quality hotel, restaurant, or hospitality operation.
- Experience catering for weddings, conferences, banquets, or large-scale events.
- HACCP and Food Safety certification.
- Strong understanding of food preparation, presentation, and kitchen procedures.
- Experience supervising and guiding junior team members.
- Excellent communication and teamwork skills.
- Eligibility to work in Ireland.
Desirable
- Previous experience within a luxury or five-star hotel environment.
- Experience in high-volume banqueting operations.
- Knowledge of food costing and stock management.
- Leadership or supervisory training.
- A passion for mentoring and developing emerging culinary talent.
