Pale Hall offers an exciting opportunity for a talented and ambitious Sous Chef to join Head Chef Sam Griffiths' team at Pale Hall with AA Five Red Stars, 3 AA Rosettes and a Michelin Green Star, in a stunning location on the edge of Snowdonia National Park.

With proven experience at a senior level in all aspects of a quality kitchen at minimum Four Star level, you’ll have a keen emphasis towards fine dining at the highest standard.  Under the direction of the Head Chef/Senior Sous Chef, you’ll ensure that attractive seasonal food of the highest quality is produced efficiently and consistently whilst achieving agreed targets and customer expectations through effective management.  We’re looking for a forward thinking, creative and inspirational chef who will help guide and motivate the team, have a lively input in the menu planning and development process, and show diligence in terms of health and safety and statutory compliance.

The right person will be a confident and experienced team player, able to establish and maintain an excellent rapport with the Restaurant Manager and other heads of department and with a keen interest in mentoring and developing junior members of the kitchen.

Palé Hall offers two contrasting dining experiences, the Henry Robertson fine dining room serving our signature four and seven course tasting menus and the rustic Huntsman bistro with a more relaxed a la carte.  Our food is created from locally sourced and sustainable produce with menus changing and developing as we move through the seasons.

This is a full time permanent position, 48 hours per week, five days over seven.

In return we offer a competitive salary, a share of monthly gratuities, generous staff discounts, free meals on duty, on-site parking and the chance to work in a really stunning location with a great team of people. If you’re the outdoor type there’s something for everyone in the area, with Mount Snowdon within driving distance, water activities at Bala, white water rafting and hiking. Live-in accommodation may be available.

Pale Hall offers a supportive and rewarding working environment in delightfully rural surroundings, where everyone is helped and encouraged to reach their full potential within a kind and friendly team.  Please be confident that you can commute within the shift patterns of the position for which you apply.
